“Why dine out when you can prawns and chill at home?”
Ingredients:
- 200g tagliatelle pasta
- 200g large prawns, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup dry white wine (optional)
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tablespoon butter
- Juice of half a lemon
- Fresh parsley, chopped (for garnish)
- Salt and pepper to taste
- Red chili flakes (optional, for a kick)
Instructions:
- Cook the Pasta:
Bring a large pot of salted water to a boil and cook the tagliatelle according to the package instructions until al dente. Drain and set aside, reserving a little pasta water. - Sauté the Prawns:
Heat 1 tablespoon of olive oil in a large pan over medium heat. Season the prawns with salt and pepper. Add the prawns to the pan and cook for 2-3 minutes per side until they’re pink and cooked through. Remove and set aside. - Make the Garlic Cream Sauce:
In the same pan, add the remaining tablespoon of olive oil and butter. Sauté the minced garlic for about 1 minute until fragrant (don’t let it burn). Add the white wine (if using) and let it reduce for 2-3 minutes. - Add Cream and Parmesan:
Lower the heat and stir in the heavy cream. Let it simmer gently for 2 minutes, then stir in the Parmesan cheese until melted and the sauce thickens slightly. Squeeze in the lemon juice and season with salt, pepper, and red chili flakes (if using). - Combine Pasta and Prawns:
Toss the cooked tagliatelle into the sauce, adding a splash of reserved pasta water if needed to loosen the sauce. Gently fold in the cooked prawns. - Serve:
Divide the pasta between two plates, garnish with freshly chopped parsley, and a little extra Parmesan if you like. Serve with a chilled glass of white wine to impress your date!
